Weekly Recipe: Blueberry Lemon Breakfast Cake

This is a moist cake and so very good. 
You can use any fruit that you like, the options are endless!


Ingredients:

18.25oz. lemon cake mix (or other flavor)
 

6oz. or 8 oz. carton plain yogurt.
 

4 eggs; slightly beaten
 

1-1/2 c. berries (or fruit of your choice)
 

1 round or bundt cake pan
 

Cooking spray




Instructions:

Combine cake mix, eggs, and yogurt (don't add oil or water).  

Blend until moist, then beat 2 minutes at medium speed.  

Fold (gently stir in fruit.)

Spray pan with cooking spray.  Add cake mixture.

Bake in 350° degree oven for 60 minutes or until done.

Cool 15 minutes before removing from pan.



Servings: 8-12
