Weekly Recipe: Bacon-Wrapped Stuffed Turkey Breast

Ingredients:
3lb. turkey breast
1lb. thin sliced bacon
10oz. pkg. chopped spinach; thawed and drained
½ stick butter; softened
1 Tbs. garlic; crushed
2 tsp. dried basil
½ c. Asiago cheese; shredded


Instructions:
Remove packaging from turkey breast and place breast skin side down on cutting board, spreading the skin out as much as possible to allow to wrap around breast. 

Blend butter, garlic and basil together and spread over inside of turkey breast.  Place spinach lengthwise down center of turkey breast and top with Asiago cheese.  Pull skin around breast to make a roll.  Set aside. 

Lay strips of bacon on cutting board slightly overlapping each piece.  Place turkey breast on top of bacon strips and begin overlapping bacon horizontally over turkey breast.  Making sure to overlap ends of bacon strips to prevent curling of bacon while cooking. 

Place turkey breast on roasting rack inside a 14" Dutch oven and hang over medium high heat (450°).  Add top coals and cook for approximately 1 to 1- ½ hours or until thermometer reads 170°.  Remove from oven and allow to rest prior to carving.

New Johnny Cash Album Available for Online Streaming

The next posthumous release from Johnny Cash will be Out Among the Stars, an album of lost songs recorded in the early 1980s. It's out March 25 through Columbia/Legacy, but you can stream it now in its entirety via The Guardian. Follow the link above to listen. 

The songs on Out Among the Stars were unearthed by the label and Cash's son John Carter Cash in 2012, and include duets with both Waylon Jennings and June Carter Cash. The material was recorded at Nashville's Columbia Studios in 1981 and 1111 Sound Studios in 1984.

Weekly Recipe: Cracker Jacks

Ingredients:
6 qts. popped popcorn; unsalted
1 c. low-fat margarine
2 c. brown sugar; packed

1/2 c. corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla


Instructions:
Have the popcorn popped and placed in a large pan. 

Bring to a full rolling boil margarine, sugar, corn syrup, and salt. Boil for 5 minutes, stirring constantly.  

Remove from heat and immediately add soda and vanilla, stirring to make the mixture foam.  Pour coating on popcorn corn and stir to coat. 

Divide popcorn between 2 greased 9x13" pans or a large greased turkey roaster. 

Bake in 250ยบ F oven for 1 hour, stirring every 15 minutes.  Pour out on counter and let cool.  Break apart and store in air-tight container. 


Notes:
Nuts can be added to the popcorn before adding the coating.  This makes it more like Cracker Jacks.

Weekly Recipe: Apricot Nectar Cake

Ingredients:
CAKE:
1 box lemon cake mix
4 eggs
2/3 c. cooking oil
1/2 c. sugar
1 c. apricot nectar

ICING:
4 Tbs. of lemon juice (fresh squeezed)
1 1/2 c. powdered sugar

Instructions:
CAKE:
Mix ingredients and bake in bundt pan at 350° for 1 hour.

ICING:
Mix ingredients and drizzle on top of cooled cake.

Weekly Recipe: Cheesy Scalloped Potatoes

Ingredients:
10-12 red potatoes
3 c. milk
1/4 c. butter
1/4 c. flour
1 sliced onion
16oz. shredded cheese
Salt and pepper; to taste






Instructions:
Preheat oven to 375.  Butter large casserole dish.

Peel and thinly slice potatoes. Place in casserole dish. Top potatoes with sliced onions.  

Melt 1/4 cup butter in large saucepan on low heat.  Stir flour into butter and then add milk.  Stir mixture constantly until it thickens.  Add 1/2 of the cheddar cheese and stir until melted.  

Pour the mixture over the potatoes and onions, mix and top with remaining cheese. Salt and pepper to taste.  

Bake for one hour or until potatoes are tender.

Weekly Recipe: Homemade Hotcakes and Syrup

A quick and easy breakfast dish!

2 c. flour
2 Tbs. sugar
2 Tbs. baking powder

1 tsp. salt
3 Tbs. cooking oil
1 egg

SYRUP:
2 c. sugar
1 c. water
Maple and vanilla flavoring; to taste


Instructions:
Mix all the ingredients together.

Add 1/2 cup milk and 1/2 cup water until preferred thickness.

(The thicker the batter the thicker the hot cakes.)

Lightly oil griddle and cook on medium heat.


SYRUP
Mix ingredients.  Bring to slight boil and boil for about 1 minute.

Our favorite is to serve it this way, hot.

You can add a little maple flavor and vanilla after you shut the heat off if you prefer.
