Weekly Recipe: Mexican Chicken Casserole

A tasty Mexican dish good for
potlucks and parties!
 
                                                               
Ingredients:
1 large whole fryer (chicken); cooked until tender(or chicken breast)
1 small pkg. corn tortillas
1 large onion; chopped
1/2lb. cheddar cheese; grated
1 green pepper; chopped
1 can cream of chicken soup
1 can cream of mushroon soup
1 can Ro-Tel® tomatoes and chilies
1 tsp. chili powder
Garlic salt to taste







Instructions:
Boil chicken until tender, bone and cut into small pieces. 

Dip tortillas in chicken broth until wilted.

Line a 9 x 13 inch baking dish with tortillas.  


Add in layers, chicken, onion, green pepper, grated cheese and 2 cans of soup combined.

Add Chili powder to Ro-Tel® tomatoes and pour over all.   

Bake at 350 for 1 hour.
