Weekly Recipe: Cucumber Sandwiches

Ingredients:
8 oz. cream cheese
2 Tbs. or so of milk
2 cucumbers, washed, peeled, & sliced
Dill; to taste
1 pkg. ranch dressing mix
1 pkg. rye bread (party or regular; quartered)






Instructions:
Soften cream cheese by setting out on the counter for a half hour, or using defrost setting, microwave for 1 minute. 

In a mixing bowl, combine softened cream cheese, ranch dressing mix and 2 Tbs. or so of milk.  


Beat with a mixer or by hand until smooth and spreadable. 

Cut rye bread slices into quarters (or use little square loaves of party rye). 

Spread rye bread with cream cheese mixture, place cucumber slice on top of spread, top with dill.



These sandwiches would be great for a summer party or picnic!
